Potassium metabisulfite, also known as potassium pyrosulfite, is a white crystalline powder with a pungent odour of sulphur dioxide. Although it is commercially used as an antioxidant, chemical sterilant, and food additive, potassium Metabisulphite is also used as an anti-fermentative in the winery and brewing industry and an antiseptic reagent for the growth of wild bacteria and fungi. Modest levels are recommended (10ppm free SO2) to provide protection from headspace oxygen.
