Calcium sulphate dihydrate or Calcium sulfate dihydrate or Gypsum is the inorganic compound with the formula CaSO 4·2H2O and the anhydrous form is used as a desiccant. Calcium sulphate causes permanent hardness in water. In food industry calcium sulphate hydrates are used as a coagulant in products such as tofu, Cheese and Related Cheese Products; Cereal Flours; Bakery Products; Frozen Desserts; Artificial Sweeteners for Jelly & Preserves; Condiment Vegetables; and Condiment Tomatoes and some candies.
