Calcium chloride is an inorganic compound, a salt with the chemical formula CaCl2. It is a colorless crystalline solid at room temperature, highly soluble in water. Food grade calcium chloride is produced under strict supervision to ensure high levels of purity and consistency. Calcium chloride is an essential cheese making ingredient. Calcium chloride will help milk coagulate better, especially when using milk which may be low in milk solids and/or overheated, or if using goat’s milk or store-bought milk which is pasteurized.
