Calcium acetate is the calcium salt of acetic acid. The monohydrate form is commonly used as a food additive, as a stabilizer, buffer and sequestrant, mainly in candy products under the number E263. This product is also used as an alkali (base) in the manufacture of soaps, to improve some lubricants, and as an antimold to preserve baked goods for a longer shelf life.
